A hearty chili best served with fresh, hot cornbread. The recipe evolved from a base with lots of help from PSJ.

Basic Chili
Ingredients
- 1 lb Ground Beef 85/15
- 1 lb Hot country sausage
- 10 0z Rotel undrained
- 16 oz Crushed tomatoes
- 2 medium onions 1 small dice; 1 large dice
- 2 tbsp chili powder
- 1 tsp Cumin
- 2 tsp Oregano dried
- 1 tsp Salt
- 1/4 cup Masa harina
- 16 oz Kidney Beans drained
- 32 oz Chili pintos drained
- 1 tsp Texas Pete
- 1/2 cup water
Garnish (optional)
- Cheddar cheese shredded
- sour cream
- Lime wedges
- green onions
Instructions
- Combine browned meat and onions with remaining ingredients.
- Bring to boil, and reduce to simmer for 2 hours. – OR – Crock pot on low for 4-6 hours on low.
Notes
Masa harina is a fine corn flour used to make fresh corn tortillas.
