White Chicken Chili


This won a local soup contest.

White Chicken Chili

Ingredients
  

  • 3 cups Rotisserie Chicken cubed
  • 2 tbsp white chicken chili mix half to three-fourths a package
  • 4 cups chicken stock
  • 1 can sweet whole kernel corn drained
  • 2 cans of cannelloni beans drained
  • 4 oz can of green chilies drained
  • 1/2 tsp onion powder
  • 1/2 tsp ground black pepper
  • 8 oz sour cream plus more for garnish

Garnish

  • fresh cilantro optional
  • extra sour cream

Instructions
 

  • Combine all ingredients except the sour cream and the optional cilantro. Bring to boil, reduce heat and simmer at least an hour. Add 8oz of sour cream in the last 15 minutes and stir to combine. Optionally garnish with a dollop of sour cream and chopped cilantro.
