Rob’s Broccoli and Cheese Soup
Ingredients
- 1/4 cup Butter
- 1/2 onion chopped
- 1 clove garlic minced
- 1/2 carrot fine chopped optional
- 20 oz frozen chopped broccoli
- 32 oz chicken broth
- 1 lb loaf processed cheese food cubed, 1 pound
- 1 cup half & half
- 5 tablespoons cornstarch dissolved in water
- Pepper
- 6-7 Drops tabasco sauce
Instructions
- In a stockpot, melt butter over medium heat. Cook onion, garlic and carrot in butter until softened.
- Stir in broccoli, and cover with chicken broth. Bring to boil, the reduce and simmer until broccoli is tender, 10 to 15 minutes. – Do Not Cover!
- Stir in cheese cubes, cornstarch, and half and half
- Simmer and stir until cheese is melted melted.
