Personal Nachos


Also try variations of this with chicken from Bryan’s Chicken Tacos or Taco Beef.  The being a great alternative to ground beef, but it is slow cooked, so it takes time.

Personal Nachos

Ingredients
  

  • 1 Family Sized Bag of Corn Chips
  • 16 oz Shredded Cheese Sharp Cheddar, Pepper Jack, etc.
  • 1 lb Ground Beef or Shredded Chicken
  • 1 pkg Taco Seasoning
  • 1 Salsa
  • 1 Medium Onion diced
  • 3 Roma Tomatoes diced
  • 8 oz Lettuce shredded
  • 4 oz Jalapeños
  • 8 oz sour cream
  • 1/2 cup fresh cilantro minced
  • 1 Avocado diced or sliced

Instructions
 

  • Preheat oven to 350
  • Mix 1 Tbs of taco seasoning with ground beef and brown it in a skillet over medium heat. Drain fat.
  • Lay out all ingredients buffet style and give each person an aluminum pie tin. Encourage guests to build their own nachos starting with a layer of chips, a layer of meat, and a layer of cheese. Add tomatoes & jalapeños as desired.
  • Place pie tins in the oven for 6 minutes. Add “cool” ingredients
  • Remove from oven and allow tins to cool to the touch (1-2 minutes).
  • Add lettuce, sour cream, cilantro, avocado and other toppings as desired.
