Pasta Carbonara


Pasta Carbonara

Ingredients
  

  • 2 tsp olive oil
  • 1 clove shallot diced
  • 6-8 strips precooked bacon chopped
  • 2 cloves garlic chopped
  • 16 oz package pasta
  • 3 egg yolks
  • 1/2 cup heavy cream
  • 3/4 cup Parmesan cheese shredded
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Heat olive oil & bacon over medium heat. Saute shallots & garlic until softened. Remove from heat.
  • Bring a large pot of salted water to a boil. Cook pasta until al dente. Drain pasta, and return to the pot.
  • In a medium bowl, whisk together egg yolks, cream, and shredded Parmesan. Pour the bacon/garlic/shallot mixture over the pasta, then stir in the cream mixture. Season with salt and pepper.
