Pasta Carbonara
Ingredients
- 2 tsp olive oil
- 1 clove shallot diced
- 6-8 strips precooked bacon chopped
- 2 cloves garlic chopped
- 16 oz package pasta
- 3 egg yolks
- 1/2 cup heavy cream
- 3/4 cup Parmesan cheese shredded
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil & bacon over medium heat. Saute shallots & garlic until softened. Remove from heat.
- Bring a large pot of salted water to a boil. Cook pasta until al dente. Drain pasta, and return to the pot.
- In a medium bowl, whisk together egg yolks, cream, and shredded Parmesan. Pour the bacon/garlic/shallot mixture over the pasta, then stir in the cream mixture. Season with salt and pepper.
