Smoked Ribs 3-2-1


The classic 3-2-1 method and assumes an electric smoker that holds temperature automatically.

Ingredients
  

  • 2 racks St. Louis Ribs
  • Rib Rub

Instructions
 

  • Fill smoker box 1/2 full. Fill water to max. Preheat smoker, and set to 225.
  • Remove sliver skin from ribs using catfish pliers or use paper towels to get grip.
  • Cover liberally with rub
  • Smoke ribs 3 hours directly on the rack.
  • Wrap in foil and return to smoker for 2 hours
  • Unwrap and return to racks for 1 hour
  • Rest for 15 minutes or more
