Rob’s Tex-Mex Chicken and Rice
Ingredients

- 2-3 cups Rotisserie Chicken one small bird
- 2 Carrots sliced half-moons
- 1 medium onion diced
- 3 cloves garlic minced
- 1 stalk celery thin sliced
- 1/2 cup rice Uncooked, (wild?)
- 4 cups chicken stock
- 1 can Rotel
- 1/2 tsp Cumin
- 5 drops Tobasco
- Salt & Pepper to taste
Garnish
- Avocado
- cilantro
- Lime Wedges
Instructions
- (Confirm these. Might need to let carrot/celery/onion/garlic cook longer before added rice & chicken) Bring everything except rice to a boil. Add rice, reduce heat to low, cover and let stand 20 minutes.
