This recipe is great, but the marinade does not scale well. See notes about doubling.
Beef Jerky
Ingredients
- 1 lb Top Round Thin cut about 1/4″ thick
- 1/2 tsp Meat Tenderizer Adolph’s is a good choice
- 1/4 cup Soy I use low sodium
- 1/4 cup Worcestershire sauce
- 1 tsp Black Pepper
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp Smoked Paprika
Instructions
- Cut the beef slices into strips
- Mix remaining ingredients to create marinade, then add beef strips
- Marinate in fridge 6-24 hours.
- Blot the beef strips dry with paper towels, and spread beef in a single layer on a baking rack.
- Bake in closed over for 2 1/2 hours at 170 degrees, then turn the oven off and let it cool to room temperature with the door still closed (~2 more hours). See notes for doubling.
Notes
I store them in a ziplock bag in the fridge.
To double, make two separate batched of marinade & meat. Lay each batch on separate backing trays and let the oven run for 3 hours with 2 hour cool down.
