Lower Carb Chili


This is a lower carb (less beans, more meat) version of my basic chili.  Not quite as good as the basic, but better for my fat belly.

Basic Chili

Total Time 4 hours 25 minutes

Ingredients
  

  • 1 lb Ground Beef 85/15
  • 1 lb Hot country sausage
  • 1 lb Country Sausage not hot
  • 20 oz Rotel undrained
  • 16 oz Crushed tomatoes
  • 2 medium onions 1 small dice; 1 large dice
  • 2 tbsp chili powder optionally make one tbsp ancho chili powder
  • 1 tsp Cumin
  • 2 tsp Oregano dried
  • 1 tsp Salt
  • 1/2 cup Masa harina
  • 1 can Chili pintos drained
  • 1 tsp Texas Pete
  • 1 cup water

Garnish (optional)

  • Cheddar cheese shredded
  • sour cream
  • Lime wedges
  • green onions

Instructions
 

  • Browned meat and onions, drain, the combine with remaining ingredients.
  • Bring to boil, and reduce to simmer for 2 hours. – OR – Crock pot on low for 4-6 hours on low.

Notes

Masa harina is a fine corn flour used to make fresh corn tortillas.
