Mexican Chicken Chili Soup
Ingredients
- 1 lb chicken breast not more than 1 lb, could be less.
- 1 can Fire Roasted Tomatoes diced, plumb
- 1 medium onion
- 4 oz Chopped Green Chilis
- 1 tsp Cumin
- 1 tsp Oregano
- 1.5 tsp chili powder
- 1 tsp paprika not smoked
- 1 tsp Taco Seasoning Mexican seasoning
- 1.5 cups chicken stock
- 1 cup Cream
- 4 oz Cream Cheese
- 1 cup Cheddar cheese
- Salt & Pepper
Garnishes
- Avocado
- cilantro
- sour cream
- cheese
Instructions
- Fry onion, garlic, and chicken in a little olive oil over medium-high heat. Chicken just need to brown, not cook through.
- Mix everything except cream and cheeses.
- Slow cook on high 2-3 hours, then fork shred the chicken.
- Add cream and cheeses, and cook until cheeses are melted. 20-30 minutes
