Spinach Tomato Tortellini
Ingredients
- 16 oz Cheese Tortellini
- 16 oz Diced tomatoes with garlic & onion
- 1 cup Fresh chopped spinach
- 3 cloves garlic minced
- 2 tbsp all-purpose flour
- 3/4 cup milk
- 3/4 cup heavy cream
- 1/2 tsp salt More for pasta water
- 1/4 tsp ground black pepper
- 1 1/2 tsp Dried Basil Leave
- 8 oz Mushrooms sliced
- 1 tsp oregano
- 6 oz Bacon, Pancetta, or Ham chopped
- 1/4 cup Parmesan cheese grated
Instructions
- Bring a large pot of salted water to boil. Add pasta and cook until almost done. About 7 minutes; it will finish cooking in a later step so do not over cook at this stage.
- In a heavy skillet combine the vegetables and spices. Bring to a simmer.
- In a bowl, mix milk, cream, and flour. Pour this into the skillet, then add parmesan cheese and simmer until thik. About 2 minutes.
- Add drained tortellini to skillet. Stir to coat and remove the skillet from the heat allowing past to finish it's last bit of cooking for 1-2 minutes.
