Crispy Roasted Potatoes

Ingredients
  

  • 1 lb red potatoes any waxy potato or fingerlings will work
  • 2 tbsp olive oil
  • 2 tsp corn starch
  • 1 tsp baking powder
  • 1/2 tsp pepper
  • 1 tbsp salt plus more for finishing
  • 1/2 tsp garlic powder
  • 1/4 cup parmesan finely grated; plus more for finishing

Instructions
 

  • Dice potatoes into 3/4 inch pieces
  • preheat over to 425
  • line a baking sheet with foil and place a rack inside
  • Transfer salt and potatoes to a large bowl of salted water for 30+ minutes (to overnight)
  • Drain, rinse and pat the potatoes dry
  • Toss potatoes with olive oil.
  • Combine cornstarch, baking powder, garlic powder, parmesean, and pepper. Toss this mixture with the potatoes.
  • Bake for 30-45 minutes. Outside should be golden brown, insides tender.
  • Sprinkle with additional parmesean and salt to taste.
