Crispy Roasted Potatoes
Ingredients
- 1 lb red potatoes any waxy potato or fingerlings will work
- 2 tbsp olive oil
- 2 tsp corn starch
- 1 tsp baking powder
- 1/2 tsp pepper
- 1 tbsp salt plus more for finishing
- 1/2 tsp garlic powder
- 1/4 cup parmesan finely grated; plus more for finishing
Instructions
- Dice potatoes into 3/4 inch pieces
- preheat over to 425
- line a baking sheet with foil and place a rack inside
- Transfer salt and potatoes to a large bowl of salted water for 30+ minutes (to overnight)
- Drain, rinse and pat the potatoes dry
- Toss potatoes with olive oil.
- Combine cornstarch, baking powder, garlic powder, parmesean, and pepper. Toss this mixture with the potatoes.
- Bake for 30-45 minutes. Outside should be golden brown, insides tender.
- Sprinkle with additional parmesean and salt to taste.
