Ingredient

Al Pastor Seasoning

Also known as: al pastor seasoning

A pre-mixed blend built to season pork with the flavors of al pastor -- typically achiote (annatto), dried chiles, cumin, garlic, oregano, and a touch of pineapple or vinegar tang -- in one shot, rather than building the traditional marinade of dried chiles, achiote paste, and aromatics from scratch.

Buying guidance

Sold alongside other Mexican-style spice blends; exact ingredient lists and heat levels vary noticeably by brand, so check the label if a particular level of spice or a specific achiote color is wanted. Some blends include salt and sugar already mixed in, which changes how much of either to add separately.

Substitutions

  • Homemade al pastor marinade (dried guajillo chiles, achiote paste, garlic, pineapple juice, oregano, vinegar) -- more work, but the traditional route and more customizable.
  • A different brand's al pastor seasoning -- freely interchangeable, though brands vary in heat and saltiness.
  • A general taco-style seasoning blend plus a pinch of ground achiote or paprika for color -- not a true flavor match, but a reasonable stand-in if al pastor seasoning specifically isn't on hand.

Tips & common mistakes

Like any pre-ground blend, it loses potency gradually and evenly, so an old jar can taste flat without any obvious warning sign -- worth a sniff test if it's been sitting a while rather than assuming full strength.

Storage

Keeps for a year or more in a sealed container at room temperature, away from heat and light; flavor gradually fades rather than the seasoning spoiling outright.
