Cajun Shrimp & Grits Soup

A Cajun shrimp and andouille sausage soup finished with prepared grits — from the 2009 Elkin Soup Off.

Instructions

  1. Season the shrimp with Cajun seasoning and salt.
  2. Heat a large heavy sauté pan over medium-high heat and sear the andouille sausage for 3-5 minutes. Remove the sausage to a plate.
  3. If the shrimp is uncooked, stir-fry it for 3 minutes, then remove.
  4. Sear the onions and peppers in the oil until tender. Add the Cajun seasoning and garlic and cook for 1 minute.
  5. Add the chicken broth and boil for 5 minutes.
  6. Add the sausage, shrimp, grits, and heavy cream. Simmer until slightly reduced and season with salt, pepper, and hot sauce to taste.
