Tomato Basil Soup

A creamy tomato basil soup finished with balsamic vinegar — from the 2008 Elkin Soup Off.

Instructions

  1. Heat the olive oil over medium heat in a large saucepan. Add the garlic and cook until tender -- do not brown.
  2. Add the tomatoes. Bring to a light boil.
  3. Reduce the heat and add the basil. Simmer for 10 minutes.
  4. Blend with a hand blender until smooth.
  5. Add the heavy cream, salt, pepper, and balsamic vinegar. Simmer for 10 minutes.
  6. Adjust the seasoning.
