Bangin' Black Beans

Ingredients
  

  • 1/2 lb Hot Sausage
  • 1/2 medium Red onion
  • 4 cloves garlic
  • 1 tsp Oil
  • 1 tsp Cumin
  • 16 oz chicken stock
  • 2 cans black beans rinsed and drained
  • 1 tsp Smoked Paprika
  • 1/2 tsp Black Pepper
  • 2 tsp Salt

Garnish

  • Lime Juice
  • cilantro
  • Hot sauce

Instructions
 

  • Brown sausage over medium-high heat.
  • Drain sausage, leaving some grease behind. Augment this with up to 1 tsp of oil as needed, then add onion, garlic, and cumin and sauté on medium heat.
  • Add chicken stock, beans, and remaining spices. Simmer until reduced by half or more.
