Mexican Chicken Chili Soup

Ingredients
  

  • 1 lb chicken breast not more than 1 lb, could be less.
  • 1 can Fire Roasted Tomatoes diced, plumb
  • 1 medium onion
  • 4 oz Chopped Green Chilis
  • 1 tsp Cumin
  • 1 tsp Oregano
  • 1.5 tsp chili powder
  • 1 tsp paprika not smoked
  • 1 tsp Taco Seasoning Mexican seasoning
  • 1.5 cups chicken stock
  • 1 cup Cream
  • 4 oz Cream Cheese
  • 1 cup Cheddar cheese
  • Salt & Pepper

Garnishes

  • Avocado
  • cilantro
  • sour cream
  • cheese

Instructions
 

  • Fry onion, garlic, and chicken in a little olive oil over medium-high heat. Chicken just need to brown, not cook through.
  • Mix everything except cream and cheeses.
  • Slow cook on high 2-3 hours, then fork shred the chicken.
  • Add cream and cheeses, and cook until cheeses are melted. 20-30 minutes
