Heat olive oil & bacon over medium heat. Saute shallots & garlic until softened. Remove from heat.
Bring a large pot of salted water to a boil. Cook pasta until al dente. Drain pasta, and return to the pot.
In a medium bowl, whisk together egg yolks, cream, and shredded Parmesan. Pour the bacon/garlic/shallot mixture over the pasta, then stir in the cream mixture. Season with salt and pepper.
