Preheat oven to 385 degrees F.
Tightly wrap garlic in foil with a drizzle of olive oil. Then wrap a second time with another sheet of foil.
Roast garlic in the preheated oven for 25 minutes.
Remove garlic from aluminum foil and transfer to a bowl.
Mash garlic, mayonnaise, Parmesan cheese, black pepper, and salt together with a fork until spread has a uniform, paste-like consistency.
