sweet potatoes
1/2" think rounds
kosher salt
nutmeg
olive oil
Instructions
Preheat oven to 425
Line a baking sheet with foil (easy cleanup) and place baking rack on top.
Peel sweet potatoes then slice into 1/2" think rounds. Place these on the baking rack and mist them with olive oil.
Sprinkle lightly with kosher salt, flip them over and mist the other side with oil, sprinkle with salt and nutmeg.
Bake for 20-25 minutes. The cooking time is very dependent on the thickness of the cut.
Notes
If you do not have olive oil in a mister, just put a tablespoon of oil and the potato rounds in a large ziplock back and shake to coat.
