Rob's Broccoli and Cheese Soup

Ingredients
  

  • 1/4 cup Butter
  • 1/2 onion chopped
  • 1 clove garlic minced
  • 1/2 carrot fine chopped optional
  • 20 oz frozen chopped broccoli
  • 32 oz chicken broth
  • 1 lb loaf processed cheese food cubed, 1 pound
  • 1 cup half & half
  • 5 tablespoons cornstarch dissolved in water
  • Pepper
  • 6-7 Drops tabasco sauce

Instructions
 

  • In a stockpot, melt butter over medium heat. Cook onion, garlic and carrot in butter until softened.
  • Stir in broccoli, and cover with chicken broth. Bring to boil, the reduce and simmer until broccoli is tender, 10 to 15 minutes. - Do Not Cover!
  • Stir in cheese cubes, cornstarch, and half and half
  • Simmer and stir until cheese is melted melted.
