Rob's Tex-Mex Chicken and Rice

Ingredients
  

Main

  • 2-3 cups Rotisserie Chicken one small bird
  • 2 Carrots sliced half-moons
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 stalk celery thin sliced
  • 1/2 cup rice Uncooked, (wild?)
  • 4 cups chicken stock
  • 1 can Rotel
  • 1/2 tsp Cumin
  • 5 drops Tobasco
  • Salt & Pepper to taste

Garnish

  • Avocado
  • cilantro
  • Lime Wedges

Instructions
 

  • (Confirm these. Might need to let carrot/celery/onion/garlic cook longer before added rice & chicken) Bring everything except rice to a boil. Add rice, reduce heat to low, cover and let stand 20 minutes.
