Fill smoker box 1/2 full. Fill water to max. Preheat smoker, and set to 225.
Remove sliver skin from ribs using catfish pliers or use paper towels to get grip.
Cover liberally with rub
Smoke ribs 3 hours directly on the rack.
Wrap in foil and return to smoker for 2 hours
Unwrap and return to racks for 1 hour
Rest for 15 minutes or more
