Heat a non-stick pan on medium-low setting.
Melt 2/3 tablespoon of butter in pan.
Place both slices of bread in the melted butter and let them soak up the butter & get hot, but not grilled.
Place all but two tablespoons of butter on on piece of bread.
Flip the other piece on top.
Place 1 tablespoon of cheese on top of sandwich.
Melt 1/3 tablespoon of additional butter in the pan next to the sandwich.
Flip sandwich on top of the newly added butter.
Place remaining 1 tablespoon of cheese on top of sandwich.
Flip occasionally letting cheese on the outside caramelize.
