A mixed-bean soup with ham and canned tomatoes — from the 2011 Elkin Soup Off.

Instructions

  1. Soak the beans in water overnight. Drain.
  2. Add the beans and 2 quarts of water to a slow cooker with the ham, onion, garlic, and salt.
  3. Cook on high for 1 hour, then reduce to low and cook 6 hours, or until the beans are tender.
  4. Add the tomatoes, Ro-Tel, Worcestershire sauce, and brown sugar. Cook on low for 1 hour, stirring occasionally.
