Rotel
A canned product of diced tomatoes mixed with green chiles, sold in a few heat levels (Original, Mild, and hotter varieties); used as a quick, already-seasoned base for dips, chili, and Tex-Mex-style dishes. Because the tomatoes and chiles are already combined and seasoned, one can replaces both an ingredient and a seasoning step.
Buying guidance
Check which heat variety is on the label -- Original, Mild, and hotter versions differ enough in chile heat that they aren't interchangeable when spice level matters. Choose a can free of bulging, deep dents, or rust on the seams.
Substitutions
- Canned diced tomatoes plus canned diced green chiles, combined -- close to the original ratio and lets you control the heat level directly.
- Plain canned diced tomatoes -- fine in a pinch, but loses the chile flavor and heat entirely, so add fresh or pickled chiles separately if possible.
Tips & common mistakes
A can of Rotel already stands in for both diced tomatoes and chopped green chiles plus some of their seasoning, so if a recipe calls for it and none is on hand, replace it with both a can of plain diced tomatoes and a small can of chopped green chiles rather than just one or the other, or the dish will taste flatter or less spicy than intended.
