A ground beef taco soup with corn, beans, and a Ranch dressing mix kick — from the 2011 Elkin Soup Off.

Bring to a Boil, Reduce, and Add

Instructions

  1. Brown the ground beef and onion together, then drain.
  2. Add the corn, pinto beans, black beans, diced tomatoes, tomato sauce, and Ro-Tel.
  3. Bring to a boil, reduce heat, and stir in the ranch dressing mix and taco seasoning.
  4. Simmer for 15 minutes.
  5. Serve with nachos, and garnish with shredded cheese and/or sour cream if desired.
